Pineapple Upside Down Cake

1/4 cup Butter

2/3 cup Brown Sugar

9 slices Pineapple

9 Maraschino Cherries

Pecan Halves

2 Egg Yolks

3/4 cups Sugar

1/4 cups Pineapple syrup, boiled

3/4 cups Flour

1/8 tsp. Salt

1/2 tsp. Baking Powder

2 Egg Whites

Prepare pan:  Melt Butter in round 9" pan.  Add Brown Sugar and stir until sugar melts.  Arrange Pineapple slices, with a Cherry in center of each, over Butter-Brown Sugar mixture.  Add Pecans to fill in spaces.

Cake mixture:  Mix slightly beaten Egg Yolks with Sugar.  Add boiling Pineapple syrup slowly, stirring constantly.  Gradually add Flour, Salt and Baking Powder, mixing well.  Fold in stiffly beaten Egg Whites.  Bake at 325 degrees for 1 hour.  Loosen edges with knife and invert cake onto serving plate.
